Vietnamese Chicken & Tofu Vermicelli Noodle Salad

Ingredients you need:
Noodle Salad
♥ 750-900g vegetables (E.g. 2 carrots (240g), julienned, 1 cucumber (125g), julienned, 0.5 iceberg lettuce (285g), finely sliced, 1 bag bean sprouts (250g))
♥ 4 cups cooked vermicelli noodles (640g) (≈175g dry)
♥ 1 tbs extra virgin olive oil (20mL)
♥ 0.5 packet Heartful Flavours Vietnamese Pho (12.5g)
Nuoc Cham (Vietnamese Sauce)
♥ 1 tbs Heartful Flavours 'Fiish' Sauce Seasoning (8g)
♥ 80mL boiled water
♥ 1 garlic clove, finely chopped (3g)
♥ 1.5 tbs white vinegar (30mL)
Spring Onion Oil
♥ 1 spring onion, sliced (15g)
♥ 2 tbs extra virgin olive oil (40mL)
Optional:
♥ mint leaves
♥ Vietnamese perilla leaves
♥ chilli
Choose your protein:
♥ 30g unsalted roasted peanuts, chopped
♥ 240g chicken breast, skinless, sliced and
♥ 350g firm tofu, cubed
♥ Alternatives: 700g firm tofu OR 300g textured vegetable protein OR 480g lean chicken breast OR 500g seafood OR 400g lean beef OR 400g lean pork (limit red meat to once a week) (half the amount if choosing two proteins)
Create This in Easy Steps:
1. Marinate protein source with Heartful Flavours Vietnamese Pho and extra virgin olive oil (if you have more time you can let marinate for 30 mins to 1 hour). Air-fry at 200 °C for 8-10 minutes, flipping half way (alternatively, cook on a pan for 6 to 8 minutes until brown, flipping half way).
2. To make the sauce, combine 1 tbs Heartful Flavours 'Fiish' Sauce Seasoning, boiled water, vinegar, garlic and optional chilli. To make the spring onion oil, heat extra virgin olive oil in a small pan for 1-2 minutes then pour onto spring onion in a bowl.
3. Place 1 cup cooked vermicelli noodles in a bowl, serve with cooked protein, vegetables, top with peanuts, optional mint leaves and perilla leaves, drizzle over the sauce and spring onion oil.
