Coconut Lime Fish and Prawn Curry

Ingredients you need:
♥ 750-900g vegetables (E.g. 1 eggplant (360g), cubed, 2 carrots (240g), sliced, 2 cups okra (200g))
♥ 3 cups cooked basmati or brown rice (425g) (≈1 cup raw 200g)
♥ 1 pack Heartful Flavours Thai Green Curry (25g)
♥ 1 tbs Heartful Flavours 'Fiish' Sauce Seasoning (8g)
♥ 1 lime, juiced
♥ 500mL light milk or calcium fortified milk alternative
♥ 200mL light coconut milk (<5g saturated fat/100mL)
♥ 1 tbs extra virgin olive oil (20mL)
Choose your protein:
♥ 250g white fish and
♥ 250g prawns
♥ Alternatives: 500g seafood, or 700g tofu, cubed, or 700g tempeh, cubed, or 600g no added salt chickpeas, or 480g skinless chicken breast, sliced (half the amount if choosing two proteins)
Optional:
♥ coriander
♥ Thai basil leaves
♥ chilli
Create This in Easy Steps:
1. Heat oil in a large pan over low-medium heat, add Heartful Flavours Thai Green Curry and sauté for 1-2 minutes until fragrant.
2. Add coconut milk, milk of choice, Heartful Flavours 'Fiish' Sauce Seasoning, lime juice and vegetables. Cover and simmer over medium heat for 3–4 minutes. Add protein source then simmer for another 3-4 minutes.
3. Serve each bowl with ¾ cup cooked rice and optional coriander, Thai basil leaves and/or chilli.
