Vietnamese chicken and prawn rice paper rolls (Gỏi Cuốn) with Peanut Dipping Sauce

Ingredients you need:
♥ 2.5 cups raw vegetables (187.5g) (1 cup lettuce (50g), 1/2 cucumber (90g), and 1 cup bean sprouts (50g))
♥ 3 rice paper sheets
♥ 0.5 cup cooked vermicelli noodles
♥ 1 tbsp peanut butter (15g)
♥ 1 tsp extra virgin olive oil (5mL)
♥ 0.5 tbsp lime juice or white vinegar (10mL)
♥ 45mL low fat milk/alternative (or water)
♥ 1/8 packet of Heartful Flavours Vietnamese Pho (3g)
Choose your protein:
♥ 60g skinless chicken breast, sliced and 65g prawns or 50g cooked, peeled and halved lengthways
♥ Alternatives: 175g tofu or tempeh or 150g no added salt chickpeas or 125g prawns or 120g skinless chicken breast
Optional:
♥ Mint, perilla or Thai basil leaves
♥ chilli, sliced
♥ shallots or garlic chives
♥ Alternative dipping sauce: 1tbs Heartful Flavours 'Fiish' Sauce Seasoning
Create Healthy Meals in 3 Steps:
1. Marinate protein (e.g. chicken) with Heartful Flavours Vietnamese Pho and extra virgin olive oil in a bowl. Air-fry chicken for 8-10 minutes or cook chicken in pan for 5-7 minutes.
2. Make the peanut dipping sauce by mixing peanut butter with lime juice or vinegar and milk or water. Microwave for 30 seconds to mix easily. Set aside to cool. (Alternative dipping sauce: Mix 1tbs Heartful Flavours 'Fiish' Sauce Seasoning with 2tbs boiled water).
3. Wet rice paper sheet in a bowl of lukewarm water and assemble rice paper roll. Place 2-3 halved prawn pieces and optional leaves in a horizontal line in the middle of the top half, then vegetables, noodles and chicken in the middle of the bottom half of the rice paper. Fold over both sides to the centre over the filling, roll up tight from bottom to the top. Dip into the sauce to enjoy!
