Thai Basil Stir-Fry (Pad Kra Pao)

Ingredients you need:
♥ 750-900g vegetables (E.g. green beans (200g), cut into 3cm pieces, 1 eggplant (300g), bite-sized chunks and 1 red capsicum (250g), cut into 3cm pieces)
♥ 2 cups basil leaves (Holy, Italian or Thai) (40g)
♥ 6 garlic cloves, chopped (18g)
♥ 0.5 red onion, chopped (60g)
♥ 1 tsp pepper (2g)
♥ 3 cups cooked brown or basmati rice (425g) (≈1 cup dry 200g)
♥ 2 tbs extra virgin olive oil (40mL)
♥ 3 tbs boiled water (48mL)
♥ 0.5 tbs Heartful Flavours 'Fiish' Sauce Seasoning (4g)
♥ 0.5 tbs Heartful Flavours 'Oister' Sauce Seasoning (4g)
♥ 0.5 tbs Heartful Flavours 'Soi' Sauce Seasoning (4g)
Optional:
♥ 2-4 chillies (20-40g), sliced
Choose your protein:
♥ 4 eggs and
♥ 480g lean chicken mince
♥ Alternatives: 700g firm tofu, crumbled OR 600g chickpeas OR 500g seafood marinara mix OR 400g lean beef mince OR 400g lean pork mince (limit red meat to once a week)
(half the amount if choosing two proteins)
Create This in Easy Steps:
1. Make the stir-fry sauce by combining Heartful Flavours 'Fiish' Sauce Seasoning, Heartful Flavours 'Oister' Sauce Seasoning and Heartful Flavours 'Soi' Sauce Seasoning, and pepper with boiled water.
2. Heat 1.5 tbs oil in a large pan or wok over medium-high heat. Sauté garlic, onion, and chilli for 1-2 minutes until fragrant. Turn heat to high, add protein source and break apart. Cook 4-5 minutes until lightly browned. Add eggplant, green beans, and red capsicum, toss for 1 minute until well combined. Pour in stir-fry sauce, cover with lid, and steam for 2-3 minutes. Toss in basil leaves and remove from heat. Heat 0.5 tbs oil in a pan, fry eggs.
3. Place stir-fry over rice, top with fried egg, and garnish with extra basil leaves.
