Thai Prawn Pad Thai

Ingredients you need:

750-900g vegetables (1 bag bean sprouts (250g), 1 carrot, cut into matchsticks (120g), broccoli, cut into halved florets (300g), 0.5 onion (80g), sliced, 3 spring onions or garlic chives, cut into 3 cm pieces, white and green parts separated (45g))

4 cups cooked rice noodles (680g) (≈176g dry and soaked in boiled water for 5 mins)

3 cloves garlic, finely chopped or minced (9g)

2 tbsp extra virgin olive oil (40mL)

1 lime (49g)

1.5 tbs tamarind puree (42g)

3 tbs boiled water (48mL)

1 tbs Heartful Flavours 'Fiish' Sauce Seasoning (8g)

1 tbs Heartful Flavours 'Oister' Sauce Seasoning (8g)


Choose your protein:

250g prawns, 3 eggs, lightly whisked and 0.25 cup unsalted peanuts (30g)

Alternatives: 500g seafood OR 700g firm tofu, cubed or tofu puffs OR 480g chicken, sliced OR 8 eggs, lightly whisked OR 1 cup unsalted peanuts (120g) OR 400g lean beef, thinly sliced (limit red meat to once a week)
(half the amount if choosing two proteins)

chilli flakes

 

Create This in Easy Steps:

1. Heat 1.5 tbs oil in a large pan over high heat. Add the garlic, onion, and white parts of the spring onion. Add the prawns and stir-fry about 30 seconds. Push everything to the side of the pan, add 0.5 tbs oil and pour in the lightly whisked eggs, scramble then mix everything together.

2. Add broccoli and carrot to the pan to cook. Meanwhile, mix 1 tbs Heartful Flavours 'Fiish' Sauce Seasoning and 1 tbs Heartful Flavours 'Oister' Sauce Seasoning with 4 tbs boiled water then add tamarind puree. Then add half the beansprouts, cooked noodles, and mixed sauce, gently toss together until well coated. Add the green parts of the spring onion and peanuts, gently toss for a further 1-2 minutes.

3. Serve with fresh bean sprouts (if preferred or you can cook all bean sprouts in step 2), a squeeze of lime and top with optional chilli flakes.
