Instant Green Curry Udon Noodle Jar

Nutritionally Balanced Recipe | SERVES 4

Ingredients you need:

750g vegetables (400g frozen corns, peas and carrots, 140g spinach, 210g mushrooms, cut into small pieces)

500mL light milk or calcium fortified milk alternative

200mL light coconut milk (<5g saturated fat/100mL)

3 tsp extra virgin olive oil (15mL)

1.2L boiled water

3 cups cooked udon noodles (400g packet)

 Heartful Flavours Thai Green Curry

 

Choose your protein:

240g cooked prawns, and

250g no added salt chickpeas, Or

400g cooked prawns or fish, sliced or 8 boiled eggs or 700g tofu, cubed or 700g tempeh, cubed or 600g no added salt chickpeas or 400g textured vegetable protein or 320g cooked chicken breast, shredded (half the amount if choosing two proteins)

 

Optional:

1 cup Thai basil, chopped

1 straw spring onion (15g), thinly sliced

1 chilli, sliced

1 lime, cut into wedges

 

Create Healthy Meals in 2 Steps:

1. In 1L glass jars, add Heartful Flavours Thai Green Curry, 50mL light coconut milk, 125mL milk/milk alternative, vegetables, protein source, noodles and top with optional spring onion, chilli, lime and Thai basil.

2. Add 300mL boiled water then wait 5 minutes to cook. Pour into a bowl, ensure the meal base is mixed in, and enjoy. If placed in fridge, leave cold jar on bench for 15-20mins or put cold jar in lukewarm water to bring to room temperature before pouring in boiled water. Ensure ingredients are cut to a small size so they cook thoroughly, otherwise microwave until cooked.

 

Each Serve Gives You:

2.5 serves of vegetables

1 serve of meat/alternatives

1.5 serves of grains

0.5 serves of dairy/alternatives
