Green Curry Pasta

Ingredients you need:
♥ 0.5 punnet mushrooms, sliced (100g)
♥ 2 cups of baby spinach leaves (90g)
♥ 1/2 medium red capsicum, cut into strips (150g)
♥ 300g no added salt chickpeas
♥ 50mL light coconut milk (<5g saturated fat/100mL)
♥ 250mL of light milk or calcium fortified milk alternative
♥ 1.5 tsp of extra virgin olive oil (7.5mL)
♥ 1/2 tbsp of lemon juice (10mL)
♥ 1/4 tsp (or pinch) of lemon zest (0.5g)
♥ 2 cups of cooked wholemeal pasta (310g)
♥ 1 handful unsalted roasted nuts of choice (30g)
♥ 1/2 packet of Heartful Flavours Thai Green Curry (12.5g)
Optional:
♥ dried chilli flakes
Create This in Easy Steps:
1. In a large pan, heat oil with Heartful Flavours Thai Green Curry till aromatic. Add in chickpeas, veggies, and mushrooms, sauté for 2 mins.
2. Pour in the coconut milk, and choice of milk. Reduce sauce for 5-6 mins over medium heat, stirring every 1-2 mins to prevent sauce sticking to pan.
3. Add in the cooked pasta, lemon juice, lemon zest. Mix and combine well with sauce, and continue reducing to desired thickness.
4. Sprinkle with nuts, and optional dried chilli flakes. Serve and enjoy!
