Vietnamese-style Sweet and Sour Soup (Canh Chua)

Nutritionally Balanced Recipe | SERVES 4

Ingredients you need:

1 bag bean sprouts (250g)

3 tomatoes, cut into wedges (450g)

200g okra or elephant ear stem or taro stem, cut diagonally into chunks

4 tsp extra virgin olive oil (20mL)

40g tamarind puree

3 cups cooked brown rice (425g) (≈1 cup dry 200g) OR 3 cups cooked rice noodles (480g) (≈132g dry)

425g can pineapple pieces in juice (300g pineapple pieces and 125mL juice)

 0.5 cup pineapple juice (125mL)

1L boiled water

Choose your protein:

500g fish, cut into 2.5cm chunks OR 700g firm tofu, cubed OR 500g prawns OR 480g chicken, sliced (half the amount if choosing two proteins)

 

Optional:

1 cup rice paddy herb or sawtooth coriander or Thai basil leaves, chopped

1 chilli, sliced

 

Create Healthy Meals in 3 Steps:

1. In a large pot, heat oil on high heat, add in okra or stems, tomato, pineapple, pineapple juice, tamarind puree and Heartful Flavours Vietnamese PhoSauté for 2mins.

2. Add 1L boiled water to the same pot. Once boiling, add protein source and simmer over medium heat until cooked. Turn off heat then add bean sprouts.

3. In each bowl, ladle in hot broth with vegetables, pineapple and protein source. Serve with steamed rice and optional herbs and/or chilli.
