Thai Green Curry Fried Rice (Khao Pad Gaeng Keow Wan)

Prep Time: 5 mins      Cook Time: 10 mins     Total Time: 15 mins

Ingredients you need:

750g frozen stir-fry vegetables

100mL light coconut milk (<5g saturated fat/100mL)

3 tsp extra virgin olive oil (15mL)

3 cups cooked brown rice (425g) (≈1 cup dry 200g)

 1/2 packet of Heartful Flavours Thai Green Curry (12.5g)

  

Choose your protein:

2 eggs, whisked and

360g skinless chicken breast, sliced, or 525g tofu or tempeh, cubed, or 450g no added salt chickpeas, or 375g fish, thickly sliced or seafood
(4/3 x the amount if not having eggs)

 

Optional:

1 cup Thai basil leaves

1 chilli, sliced

lime wedges

 

Create This in Easy Steps:

1. ⁠Heat oil in a wok or pan over high heat. Add Heartful Flavours Thai Green Curry then add protein source and cook for 2 mins.

2. Make space on the side, add whisked eggs and scramble quickly - about 20 seconds. Add vegetables, coconut milk and cook for 3 mins.

3. Add rice and stir-fry until evenly mixed. Toss through optional Thai basil and garnish with optional lime wedges and chilli.

4. Sprinkle with nuts, and optional dried chilli flakes. Serve and enjoy!
