Vietnamese Crab Meatball and Tomato Noodle Soup (Bún Riêu)

Ingredients you need:
♥ 1.125-1.35kg vegetables (E.g. 4 tomatoes, quartered or cut into wedges (600g), 2 cup water spinach or celery, peeled in strips or bean sprouts (75g), 0.5 lettuce (225g), shredded, 0.5 cabbage (225g), shredded)
♥ 1 onion (150g), finely chopped
♥ 6 spring onions (90g), sliced
♥ 6 garlic cloves (18g), finely chopped
♥ 1 tsp pepper (2g)
♥ 6 cups cooked vermicelli noodles (1.02kg or 260g dry)
♥ 2 tbs Heartful Flavours 'Fiish' Sauce Seasoning (16g)
♥ 2.4L water
♥ 3 tbs tomato paste (48g)
♥ 2 tbs extra virgin olive oil (40mL)
Choose your protein:
♥ 240g lean chicken mince
♥ 125g prawns, minced
♥ 125g crab meat
♥ 3 eggs and
♥ 175g tofu puffs
♥ Alternatives: 1.05kg tofu puffs OR 300g textured vegetable protein OR 750g seafood OR 720g lean chicken mince OR 600g lean beef mince OR 600g lean pork mince (limit red meat to once a week)
Optional:
♥ mint leaves
♥ Vietnamese perilla leaves
♥ Vietnamese balm leaves
♥ coriander
♥ chilli
Create This in Easy Steps:
1. Make meatball by mixing chicken mince, prawn, crab meat, eggs, pepper, half spring onion, 1 tbs oil and 0.5 tbs Heartful Flavours 'Fiish' Sauce Seasoning.
2. Heat 1 tbs oil in the pot. Add onion, garlic, tomatoes, tomato paste and sauté for 2-3 minutes. Then add water, 1.5 tbs Heartful Flavours 'Fiish' Sauce Seasoning, tofu puffs and allow to boil. Turn down the heat to a simmer, add the meatball mixture and allow to cook for 10-15 minutes. When the meatballs float up they are cooked.
3. Serve with cooked noodles, lettuce, cabbage, water spinach, top with leaves and remaining spring onion. Serve!
