Thai Coconut Soup (Tom Kha)

Ingredients you need:
♥ 750-900g vegetables (E.g. 400g oyster mushrooms, other Asian mushrooms or common, and 350g tomatoes, cut into wedges)
♥ 1 lemongrass stalks, peeled tough outer layers, bruised then cut into 5cm pieces (30g)
♥ 6 galangal slices (60g)
♥ 4 kaffir lime leaves, roughly torn (2g)
♥ 2 chillies, cut in half (20g)
♥ 4 cups cooked basmati or brown rice (567g) (≈4/3 cup raw 267g) OR 4 cups cooked noodles (680g) (≈176g dry)
♥ 400mL light coconut milk (<5g saturated fat/100mL)
♥ 2 tbs lime juice from 1 lime, squeezed, adjust to preferred sourness (40mL)
♥ 1 tbs extra virgin olive oil (20mL)
♥ 2 cups water or unsalted stock (500mL)
♥ 1.5 tbs Heartful Flavours 'Fiish' Sauce Seasoning (12g)
Choose your protein:
♥ 240g skinless chicken breast or thigh, cubed
♥ 350g firm tofu, cubed or tofu puffs
♥ Alternatives: 480g skinless chicken breast or thigh OR 500g prawns OR 500g seafood OR 700g firm tofu, cubed or tofu puffs
(half the amount if choosing two proteins)
Optional:
♥ coriander for garnish
Create This in Easy Steps:
1. Marinate the chicken with 0.5 tbs Heartful Flavours 'Fiish' Sauce Seasoning and oil.
2. Add water or unsalted stock, light coconut milk, lemongrass, galangal, kaffir lime leaves, chilli, tofu, mushrooms, chicken, 1 tbs Heartful Flavours 'Fiish' Sauce Seasoning to a pot and simmer for 8 minutes. Add tomatoes and simmer for another 1-2 minutes, or until chicken is cooked.
3. Ladle into bowls. Garnish with coriander, squeeze over lime to your preferred level of sourness and serve with cooked rice or noodles.
