Korean Cheesy Chicken and Tofu Stir-Fry (Dakgalbi)

Ingredients you need:
♥ 750-900g vegetables (E.g. 1 small cabbage (400g), cut into bite sized pieces, 1 small carrot (120g), diagonally sliced, 1 small sweet potato (200g), halved lengthwise then sliced into bite size pieces, 1 small onion (100g), sliced)
♥ 3 spring onion (45g), cut into 5cm pieces
♥ 1 tsp ginger (2g)
♥ 1 tbs garlic (6g)
♥ 1 tsp pepper (2g)
♥ 3 cups cooked basmati or brown rice (425g) (≈1 cup raw 200g)
♥ 1 pack Heartful Flavours Korean Bibimbap (25g)
♥ 1 tbs Heartful Flavours 'Soi' Sauce Seasoning (8g)
♥ 90mL water
♥ 1 tbs extra virgin olive oil (20mL)
♥ 1 tbs sesame oil (20mL)
♥ 1 cup shredded low fat mozarella cheese (120g)
Choose your protein:
♥ 240g chicken breast, cut into small bite sized pieces and
♥ 350g tofu, cut into chips
♥ Alternatives: 700g tofu, cubed or 480g skinless chicken breast, sliced or 500g salmon or seafood, or 600g no added salt chickpeas (half the amount if choosing two proteins)
Optional
♥ Korean perilla leaves or lettuce leaves, can use to wrap
Create This in Easy Steps:
1. Put cabbage, protein source, onion, spring onion, sweet potato, carrot, Heartful Flavours Korean Bibimbap, ginger, garlic, pepper, Heartful Flavours 'Soi' Sauce Seasoning, water, extra virgin olive oil and sesame oil in a pan (if you have more time you can let this marinate for 30 mins to 1 hour).
2. Stir-fry over medium heat for 15-20 minutes (if the pan looks dry, add additional 0.5 cup water). If using cheese, add with 2-3 minutes remaining.
3. Garnish with more spring onions and serve with cooked rice!
