Vietnamese Noodle Stir-Fry with Prawns and Tofu (Hủ tiếu xào tôm đậu hũ)

Ingredients you need:

750g frozen stir-fry vegetables

1 packet of Heartful Flavours Vietnamese Pho

4 tsp extra virgin olive oil (20mL)

3 cups soaked rice noodles or wok-ready noodles (480g) (≈132g dry)

 

Choose your protein:

180g prawns and 450g tofu

Alternatives: 500g seafood or fish OR 700g firm tofu, cubed or tofu puffs OR 480g chicken, sliced OR 2 eggs OR 400g lean beef, thinly sliced (limit red meat to once a week)
(half the amount if choosing two proteins)

 

Optional (to make sauce thicker, mix and add to stir-fry):

0.5 Cup cold water

2 tbsp potato or corn starch

 

Create Healthy Meals in 3 Steps:

1. Heat oil in pan over medium high heat. Toss in protein source.

2. Add vegetables, noodles and season with Heartful Flavours Vietnamese Pho. Cook for 5-10 minutes depending on the protein source. Serve and enjoy!
