Thai Spicy Sour Soup (Tom Yum)

Ingredients you need:
ā„ 750-900g vegetables (E.g. 400g oyster mushrooms, can be other mushrooms like straw or common, 350g 2 tomatoes, cut into wedges)
ā„ 2 lemongrass stalks, peeled tough outer layers, bruised then cut into 5cm pieces (30g)
ā„ 6 galangal slices (60g)
ā„ 6 kaffir lime leaves, roughly torn (3g)
ā„ 2 chillies, sliced (20g)
ā„ 0.5 onion, finely chopped (50g)
ā„ 4 cups cooked basmati or brown rice (567g) (ā4/3 cup raw 267g) OR 4 cups cooked noodles (680g) (ā176g dry)
ā„ 4 tbs lime juice from 2 limes, squeezed, adjust to preferred sourness (80mL)
ā„ 2 tbs extra virgin olive oil (40mL)
ā„ 4.5 cups water if making 4 cups prawn stock, or 4 cups water or unsalted stock (1L)
ā„ 1 tbs Heartful Flavours 'Fiish' Sauce Seasoning (8g)
Choose your protein:
ā„ 250g prawns from 500g whole prawns, peeled and deveined with heads and shell reserved if making prawn stock
ā„ 350g firm tofu, cubed or tofu puffs
ā„ Alternatives: 500g prawns OR 500g seafood OR 700g firm tofu, cubed or tofu puffs
(half the amount if choosing two proteins)
Optional:
ā„ coriander
ā„ to make creamy, add 0.5 cup unsweetened evaporated milk (125mL)
Create This in Easy Steps:
1.Ā If making prawn stock, heat oil over medium-high heat then sautĆ© onion with prawn heads and shells until browned. Add water, bring to the boil, then cover and simmer for 5 minutes before removing prawn heads and shells using a slotted spoon or strain the broth.Ā
If not making prawn stock, heat oil over medium-high heat, sautƩ the onion until lightly browned and pour in water or unsalted stock.
2. Add lemongrass, galangal, kaffir lime leaves, chilli, tofu, mushroom, optional evaporated milk if you want the creamy version, and simmer for 3-4 minutes. Add tomatoes, Heartful Flavours 'Fiish' Sauce Seasoning and prawns. Simmer for 1 minute then turn off the heat and let residual heat cook the prawns.Ā Ā
3. Ladle into bowls. Garnish with coriander, squeeze over lime to preferred level of sourness and serve with cooked rice or noodles.Ā
