One-pot Thai Green Curry Chicken and Tofu Rice (in Rice Cooker)

Ingredients you need:

375g vegetables (60g green beans, 85g sliced mushrooms, 120g diced carrot, 50g edamame beans and 60g corn)

100mL light coconut milk (<5g saturated fat/100mL)

1.5 tsp extra virgin olive oil (7.5mL)

0.5 cup brown rice (100g)

1/2 packet of Heartful Flavours Thai Green Curry


Choose your protein:

120g skinless chicken breast, thickly sliced and 175g tofu, cubed

Alternatives: 240g skinless chicken breast, thickly sliced or 350g tofu, cubed or tempeh, cubed or 300g no added salt chickpeas or 250g salmon

 

Optional:

1 cup Thai basil or mint leaves

1 chilli, sliced

 

Create This in Easy Steps:

1. ⁠Coat protein source with Heartful Flavours Thai Green Curry and oil.

2. Rinse rice in pot. Add 100mL light coconut milk and top the rest with water as per rice cooker required fluid level indicator such as additional 87.5mL water. Add vegetables and coated protein source. Turn on rice cooker.

3. When rice cooker is finished. Mix together and top with optional Thai basil leaves and chilli. Enjoy!
