Vietnamese Lemongrass Chicken Vermicelli Noodle Salad with Nước Chấm Sauce

Ingredients you need:

 

Noodle Salad

750-900g vegetables (E.g. 2 carrots (240g), julienned, 1 cucumber (125g), julienned, 0.5 iceberg lettuce (285g), finely sliced, 1 bag bean sprouts (250g))

1 lemongrass stalk, peeled tough outer layers and use soft white parts on the bottom 8-10cm only (15g), bruised then finely chopped (other parts are tough but you can save to infuse broths)

2 clove garlic, finely chopped (6g)

0.25 tsp pepper (0.4g)

4 cups cooked vermicelli noodles (640g) (≈175g dry)

2 tbs extra virgin olive oil (40mL)

1.5 tbs lime juice (30mL)

1 tbs Heartful Flavours 'Fiish' Sauce Seasoning (8g)


Choose your protein:

480g chicken breast, skinless, sliced and 30g unsalted roasted peanuts

Alternatives: 700g firm tofu OR 500g seafood OR 400g lean beef OR 400g lean pork (limit red meat to once a week)
(half the amount if choosing two proteins)

 

Nước Chấm (Vietnamese Sauce)

0.5-1 tbs Heartful Flavours 'Fiish' Sauce Seasoning (4-8g), adjust to taste

80mL boiled water

1 garlic clove, finely chopped (3g)

1.5 tbs white vinegar (30mL)

 

Spring Onion Oil

1 spring onion, sliced (15g)

2 tbs extra virgin olive oil (40mL)

 

Optional:

mint leaves

Vietnamese perilla leaves

chilli


Create This in Easy Steps:

1. Marinate chicken with lemongrass, garlic, pepper, 1 tbs Heartful Flavours 'Fiish' Sauce Seasoning, extra virgin olive oil, and lime juice (if you have more time you can let marinate for 30 mins to 1 hour). Air fry at 200 °C for 8 minutes, flipping half way (or pan fry 6 to 8 minutes until brown, flipping half way).

2. To make the sauce, mix 0.5-1 tbs Heartful Flavours 'Fiish' Sauce Seasoning, boiled water, vinegar, garlic and optional chilli. To make the spring onion oil, heat extra virgin olive oil in a small pan for 1-2 minutes, then pour over sliced spring onion in a bowl.

3. Place 1 cup cooked vermicelli noodles in a bowl, top with lemongrass chicken, vegetables, peanuts, and optional mint and perilla leaves. Drizzle over the sauce and spring onion oil.
