Korean Spicy Cold Noodles (Bibim Guksu)

Nutritionally Balanced Recipe | SERVES 4

Ingredients you need:

 ⁠700g cold tofu, cubed or 8 boiled eggs, sliced

 1/2 small lettuce or wombok leaves, shredded (200g)

 1/2 small red cabbage, shredded (230g)

 1 cucumber, cut into half disc (200g)

 1 carrot, cut into matchsticks (120g)

4 cups cooked soba noodles (680g)(≈260g dry)

Sauce

 1 packet Heartful Flavours Korean Bibimbap (25g)

 60mL boiled water

 2 tbsp lemon juice or white vinegar (40mL)

 2 tbsp sesame oil (20mL)

 1 handful toasted sesame seeds (30g)

 

Create This in Easy Steps:

1. In a large bowl, combine Heartful Flavours Korean Bibimbap, water, lemon juice, sesame oil and toasted sesame seeds until consistent and glossy.

2. Toss in noodles, mix until evenly coated.

3. To assemble, add 1 cup of glazed noodles in each bowl with protein source and vegetables. Mix and enjoy!
