Rice Paper Pancakes with Prawns, Egg and Vegetables

Ingredients you need:
Rice Paper Pancakes
♥ 375-450g vegetables (E.g. 400g shredded slaw mix)
♥ 1 spring onion, sliced (15g)
♥ 0.25 tsp pepper (0.5g)
♥ 8 rice paper sheets (80g)
♥ 2 tbs extra virgin olive oil (40mL)
Nuoc Cham (Vietnamese Sauce)
♥ 0.5 garlic clove, finely chopped (1.5g)
♥ 0.75 tbs white vinegar (15mL)
♥ 2 tbs boiled water (32mL)
♥ 0.5 tbs Heartful Flavours 'Fiish' Sauce Seasoning (4g)
♥ chilli (optional)
Choose your protein:
♥ 125g prawn and
♥ 2 eggs
♥ Alternatives: 250g prawns or 4 eggs, whisked or 350g tofu or 100g textured vegetable protein or 240g lean chicken mince
(half the amount if choosing two proteins)
Create This in Easy Steps:
1. To make the sauce, combine Heartful Flavours 'Fiish' Sauce Seasoning, garlic, vinegar, boiled water and optional chilli.
2. In a large bowl, combine the slaw mix, prawns, eggs, spring onions and pepper.
3. Heat 0.5 tbs oil in a large pan over medium heat. Place one sheet of dry rice paper in the pan, add 1/4 of the mixture and spread into an even layer. Top with another dry rice paper and gently press down the edges to seal. Cook for 3-4 mins on each side until golden brown and the filling is fully cooked. Repeat 3 times with the remaining mixture. Garnish with spring onions, cut into triangles, and serve with the sauce.
