Viral Dumpling Lasagna

Ingredients you need:
Dumpling Lasagna
♥ 750-900g vegetables (E.g. 0.25 wombok (410g), chopped, 2 carrots (240g), grated, 100g shiitake mushroom (20g dried, rehydrated); save the liquid to ladle over the dumpling lasagna, finely chopped)
♥ 1 clove garlic, finely chopped (3g)
♥ 1 tsp ginger, finely chopped (2g)
♥ 1 spring onion, sliced, separate white and green parts (15g)
♥ 0.25 tsp white or black pepper (0.5g)
♥ 1 tbs extra virgin olive oil (20mL)
♥ 1 tsp sesame oil (5mL)
♥ 30 dumpling or wonton wrappers
♥ small bowl of water to dip dumpling wrapper
♥ 0.5 tbs Heartful Flavours 'Soi' Sauce Seasoning (4g)
♥ 0.5 tbs Heartful Flavours 'Oister' Sauce Seasoning (4g)
Sauce
♥ 0.5 tbs Heartful Flavours 'Soi' Sauce Seasoning (4g)
♥ 0.5 tbs white or rice vinegar (8mL)
♥ 1 tbs boiled water (16mL)
Choose your protein:
♥ 240g lean chicken mince and 250g shrimp
♥ Alternatives: 700g firm tofu, crumbled OR 200g textured vegetable protein OR 8 eggs scrambled, cut into strips OR 500g fish, minced OR prawns, chopped OR 400g lean pork or beef mince (limit red meat to once a week)
(half the amount if choosing two proteins)

Create This in Easy Steps:
1. In a mixing bowl, combine protein sources, shiitake mushroom, carrot, cabbage, garlic, ginger, white parts of spring onion, pepper, 0.5 tbs Heartful Flavours 'Soi' Sauce Seasoning, 0.5 tbs Heartful Flavours 'Oister' Sauce Seasoning, extra virgin olive oil and sesame oil.
2. To make the sauce, mix 0.5 tbs Heartful Flavours 'Soi' Sauce Seasoning with 1 tbs boiled water, 0.5 tbs vinegar (add less vinegar if you like it less tangy) and optional chilli.
3. To assemble the dumpling lasagna, wet each dumpling wrapper and place them onto the bottom of the tray or individual ramekins. Spread a layer of the dumpling filling on top and repeat the process until there is three dumpling filling layers and finish with an additional dumpling wrapper layer on the top. Ladle over the shiitake mushroom liquid. Add baking tray to large pan or pot with water, cover with a lid and steam for 25 minutes. Garnish with spring onions and sauce on top. Serve a quarter of the dumpling lasagna and enjoy!
