One-pot Vietnamese Chicken Rice (in Rice Cooker)

Ingredients you need:

♄ 375g frozen stir-fry vegetables or fresh vegetables (80g mushrooms, sliced, 120g carrot, sliced diagonally thinly, 100g half broccoli head, cut into florets, 75g capsicum, thickly sliced)

♄ 1/2 packet ofĀ Heartful Flavours Vietnamese Pho

♄ 2 tsp extra virgin olive oil (10mL)

♄ 0.5 cup basmati or brown rice (100g)

Choose your protein:

♄ 240g skinless chicken breast, sliced

♄ Alternatives: 350g tofu, cubed or tempeh, cubed or 300g no added salt chickpeas or 250g salmon

Optional:

♄ Vietnamese mint or shallot

♄ chilli, sliced


Create Healthy Meals in 3 Steps:

1. Coat protein source with Heartful Flavours Vietnamese Pho and oil.

2. Rinse rice in pot. Add vegetables and coated protein source. Turn on rice cooker.

3. When rice cooker is finished. Serve and top with optional Vietnamese mint leaves/shallots and chilli. Enjoy!

Very easy, tasty meal. I note there was no water in the recipe so I added how much the rice cooker recommended. Would have been a disaster without the water.
