Hainanese Chicken Rice (One-Pot Rice Cooker)

Ingredients you need:

♄ 750-900g vegetables (E.g. 4 cucumbers, sliced (800g))

♄ 3 cloves garlic, finely chopped (9g)

♄ 2 tbs ginger, finely chopped (12g)

♄ 2 spring onions, white parts cut into 5cm pieces and green parts sliced (30g)Ā 

♄ 0.125 tsp or 1 pinch pepper (0.2g)

♄ 4/3 cup basmati or brown rice (265g)

♄ 2 tbs extra virgin olive oil (40mL)

♄ 1 tbs sesame oil (20mL)

♄ 1.5 tbsĀ Heartful Flavours 'Soi' Sauce Seasoning (12g)


Choose your protein:

♄ 480g skinless chicken breast or chicken thigh

♄ Alternatives: 700g tofu, or 500g fish
(half the amount if choosing two proteins)

Create This in Easy Steps:

1. Marinate chicken in pepper, 1 tbsĀ Heartful Flavours 'Soi' Sauce Seasoning, and sesame oil.

2. Rinse rice, add water to the required fluid level, spring onion whites, garlic and half ginger. Give it a quick mix. Place the marinated chicken on top. Close the lid and set the rice cooker to the standard cook setting. When the rice cooker is done, remove the chicken and slice into strips, and gently fluff the rice.Ā 

3. Pour extra virgin olive oil over spring onion greens, half ginger, 0.5 tbs Heartful Flavours 'Soi' Sauce Seasoning and optional chilli. Plate the rice with sliced chicken, cucumber and serve with ginger spring onion oil.
